Ceviche and Flowers

Recently, we had a master class on how to ceviche, a dish that consist of marinated seafood and vegetables that is now traditional to Ecuador. Though ceviche’s creation is attributed to Asian immigrants in Perú, it is widely enjoyed in the region and worldwide.

Under the direction of Noemi, the students and faculty made their own delicious ceviche.

Forever Flowers is farming and sales operation that supports several projects of FACE, Fundación de Adelanto Comunitario Ecuatoriano, including a shelter for children —where we place students for service— a center for prevention and intervention against domestic and gender violence, and an affordable clinic for community members in Cayambe.

Sister Esther and Blanquita showed us around and explained how the farm functions, all the works it takes, and the community projects it supports.
