2nd Annual Dandelion Day

In the second annual Dandelion Day, EcoPAX harvested dandelion greens from campus prairies that have had no pesticides sprayed for the last 3 years (so they are safe for consumption) and then AVI Fresh Dining Hall chef Jeremy Corson prepared them into some dishes for lunch, including: dandelion greens salad mix, dandelion bacon and onion composed salad, dandelion omelets, dandelion pasta al aglio, steak and potato salad with dandelion greens and dandelion muffins and cookies.
